Tofu Chocolate Torte

Ingredients:
Filling:
- 1 pkg silken tofu
- ¼ cup soy milk
- ¼ cup packed pitted dates
- 1/3 cup organic cocoa powder
- 2 tbsp melted coconut oil
- 1 tsp pure vanilla
- ½ tsp orange zest
Crust:
- ½ cup unsweetened flaked coconut
- ½ cup ground raw almonds
- ¾ cup spelt flour
- 1 tsp fresh ground nutmeg
- 2 tbsp coconut oil
- ¼ cup pitted dates
Directions:
- For the crust blend in a food processor the almonds and dates then add the rest of the ingredients and knead until it forms a ball. Press into a 9” round pan and chill.
- For the filling blend all ingredients in a processor until smooth and pour into your chilled crust and refridgerate until firm. Garnish with mint leaf and red berry and serve.
