Live Pie with Lemon~Creme and Spiced Apples

Okay - so we all know there is apple pie, and then there is APPLE PIE! But here is a new version of that 'takes the cake' so to speak!
Ingredients:
Crust:
2 c. almonds
2 c. dates
pinch sea salt or himalayan salt
Apple-Lemon Creme:
1 apple
1 1/2 tb. lemon juice
1/2 c. macadamia nuts
1/4 c. hemp seeds
3/4 c. raw extra virgin coconut oil
1/4 - 1/2 c. raw honey, agave nectar, coconut nectar or your favorite liquid sweetener (can adjust to taste)
2 tb. non-gmo lecithin
1 tb. alcohol-free vanilla flavor
pinch sea salt or himalayan salt
1 c. raw almond milk (may need to add more to get a smooth consistency)
Spiced Apples:
2 apples
2 tsp. cinnamon
2 tsp. nutmeg
1 tsp. ginger powder
1 tb. alcohol-free vanilla flavor
2 tb. raw honey, agave nectar, coconut nectar or your favorite liquid sweetener

Instructions:
Crust:
Place almonds and salt in food processor and
blend until fairly fine. Then, begin adding in dates one at a time
(make sure there are no pits!). Crust is done when the mixture stops
turning over and just spins around as one big lump in the food
processor. You may need to add more dates or a little bit of water to
get the right consistency, as the moisture content in dates varies.
Press mixture into your pie pan, keeping all sides even. Can
refrigerate or freeze if desired.
Apple-Lemon Creme:
Add all
ingredients to blender and blend until you get a smooth, luscious
consistency. Pour into crust and let sit in refrigerator for 1-2 hours.
Spiced Apples:
Slice
apples and add into bowl with other ingredients. Mix well to coat.
Arrange slices on top of the creme layer. You can top with a sprinkling
of goji berries or any other berry you love.
Devour in ecstatic bliss and enjoy! :)
